  • ¼ teaspoon dried oregano (preferably Mexican oregano)
  • ¼ cup water (for blending sauce)

  • 12 corn tortillas (standard, not “extra soft”)
  • ½ cup neutral oil for frying (e.g., avocado, canola, vegetable)
  • 2 cups shredded cheese (e.g., Mexican muenster, Chihuahua, asadero, Oaxaca, or Monterey Jack)
  • 2 tablespoons oil (for sautéing chicken)

Optional Garnishes

Instructions

 

  • 1. Prepare the Chicken: Place chicken breasts, ½ onion, 2 garlic cloves, and 1 teaspoon salt in a medium pot. Cover completely with water. Bring to a boil, then reduce heat to a simmer. Cover and simmer for 10 minutes. Turn off heat and leave the pot covered for another 10 minutes to finish cooking and tenderize. Drain the chicken, discarding the boiled onion and garlic. Use two forks or your hands to shred the chicken finely. Set aside.
  • 2. Make the Tomato Sauce: In a small pot, boil the 3 Roma tomatoes, ¼ piece of onion, and 1 large garlic clove in water until soft (about 8 minutes). Transfer the softened vegetables to a blender. Add ½ teaspoon salt, ¼ teaspoon black pepper, ¼ teaspoon dried oregano, and ¼ cup water. Blend until completely smooth.
  • 3. Combine Filling: Heat 2 tablespoons of oil in a large pan over medium heat. Add the shredded chicken and sauté for about 3 minutes until it starts to turn a light golden color. Pour the blended tomato sauce over the chicken and stir to combine. Cook for an additional 2 minutes, allowing the flavors to meld beautifully. Taste and adjust seasoning as needed. Remove from heat and set aside. Shred the cheese if not already done.
  • 4. Warm Tortillas: Heat a comal or frying pan over medium heat. Warm each corn tortilla individually until soft and pliable (about 10-15 seconds per side). It’s crucial they are soft enough to fold without breaking, but not crispy. Alternatively, warm tortillas in a damp kitchen towel in the microwave for 1 minute or use a tortilla warmer.
  • 5. Assemble Tacos: Place about 2 tablespoons of the chicken filling onto one half of a warmed tortilla. Sprinkle generously with shredded cheese. Fold the tortilla in half to create a half-moon shape, gently pressing to secure the filling. Repeat with remaining tortillas.
