  • Carefully scoop out some of the soft white middle part (crumb) to create a pocket in which to place the filling.
  • Spread butter on the inside of each half.
  • Lightly toast the bread on both sides until soft and golden on a comal or pan.
  • Place bolillos on a baking sheet and spread each bolillo half with a generous amount of refried beans.
  • Top with shredded cheese.
  • Bake for 5-10 minutes until cheese is melted and bubbly.
  • Serve immediately with fresh chipotle salsa on the side or drizzled over the top.

Chipotle Salsa

  • Begin by boiling the whole Roma tomatoes in water until they become fork-tender and the skins start to loosen.
  • Once softened, carefully remove the tomato peel and add the tomatoes to a blender or food processor.
  • To the blender, add the chipotle peppers in adobo sauce, the specified amount of adobo sauce from the can, garlic powder, kosher salt, and water.
  • Blend all ingredients until the salsa is smooth and well combined.
  • Heat 1 tablespoon of oil in a small saucepan on medium-low heat. Once the oil is hot, carefully pour the blended salsa into the pan.

    • Start with approximately 4 cups of perfectly cooked homemade pinto beans (these can be made in advance).
    • Heat about ½ cup of your preferred cooking oil (like vegetable oil or lard) in a medium skillet over medium-low heat until shimmering.
    • Add the cooked pinto beans and some of their cooking liquid to the hot skillet.
    • Bring the mixture to a gentle simmer and continue to cook for about 4 minutes, allowing the flavors to deepen.
