Ingredients

  • 3.5 ounce box butterscotch cook & serve pudding mix, unprepared (not the “instant” pudding!)
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 2 tubes jumbo buttermilk biscuits (I use Aldi brand or Pillsbury Grands!, not flaky layers)

For the Gooey Glaze

  • ½ cup unsalted butter (i.e. 1 stick) cut into pieces for quicker melting
  • ¾ cup light brown sugar
  • 1 teaspoon cinnamon
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Grease a 9×13″ pan generously with nonstick spray and line with parchment paper, leaving an overhang on the longer sides for easy removal. Set aside.
  • In a medium-sized bowl, mix together dry butterscotch cook & serve pudding powder (3.5-ounce box), granulated sugar (2 tablespoons), and cinnamon (1 teaspoon) until well combined.
  • Open the biscuit cans. Cut each jumbo buttermilk biscuit into 4 small, even pieces and toss them thoroughly in the powder mixture until each piece is coated. Arrange the coated dough in a single, even layer in the prepared 9×13″ pan, avoiding excessive stacking.
  • In a large microwave-safe bowl or measuring cup, add cut unsalted butter (½ cup, i.e. 1 stick), light brown sugar (¾ cup), and milk (½ cup). Microwave for 2 minutes on high, then stir well. If butter chunks still remain, microwave for another 1 minute and stir again until the mixture is completely smooth.
  • To the warm liquid butter mixture, stir in the leftover pudding powder mixture (any remaining from coating the biscuits), an additional cinnamon (1 teaspoon), and vanilla extract (1 teaspoon). Whisk thoroughly until the glaze is smooth and fragrant. Pour this gooey butterscotch glaze evenly over the biscuit dough pieces in the pan, ensuring all pieces are well-covered.
  • Bake in a preheated oven at 350℉ (175°C) for 24-26 minutes, or until the top is lightly golden brown, the biscuits are puffed, and the glaze is bubbly. Serve directly from the pan. If you wish to flip it onto a rimmed serving tray for presentation, allow it to cool in the pan for at least 5 minutes first to allow the hot, sticky glaze to set slightly. This prevents the sauce from running off.
