Tender, moist, and bursting with savory flavor, this Whole30 Instant Pot Savory Shredded Chicken is a culinary game-changer. It’s incredibly easy to prepare, making it the perfect foundation for countless delicious and healthy meals.
Shredded chicken is undeniably a kitchen superhero, an incredibly versatile ingredient that forms the backbone of countless beloved dishes. Think classic chicken flautas, rich chicken enchiladas, comforting chicken noodle soup, complex chicken mole, or even modern favorites like buffalo ranch chicken dip – the possibilities are truly endless. Having a batch of perfectly cooked, savory shredded chicken on hand transforms mealtime from a chore into a creative culinary adventure.
My inspiration for this recipe stems from childhood memories. Growing up, my mom was a master of efficiency in the kitchen. When she’d prepare her famous *caldo de pollo* (chicken noodle soup) in the pressure cooker, she would always cook extra chicken. This wasn’t just for a larger pot of soup; it was a deliberate, strategic move. She would meticulously shred the leftover chicken and repurpose it into a variety of different dishes throughout the week – her favorites often included mole and flautas.
Back then, I simply enjoyed the delicious meals. I didn’t fully grasp the foresight and planning involved in her methods. Now, with the widespread appreciation for meal prepping and meal planning, I see her approach as an invaluable hack. It’s a simple strategy that saves an enormous amount of time and effort during busy weekdays, ensuring wholesome meals are always within reach.
However, as much as I adore *caldo de pollo*, sometimes I crave that same tender, flavorful chicken without having to make a whole soup. That’s precisely where today’s recipe for **Whole30 Instant Pot Savory Shredded Chicken** comes into play. It captures all the juiciness and rich flavor I remember from my mom’s kitchen, but in a streamlined, Whole30-compliant format, ready to be shredded and incorporated into any recipe imaginable.

This recipe isn’t just easy; it’s a powerhouse for healthy eating and efficient meal planning. Here’s why it deserves a permanent spot in your cooking rotation:
- Effortless Whole30 Compliance: Sticking to a Whole30 program can be challenging, but this recipe makes it simple to have compliant protein ready for any meal. Free from grains, legumes, dairy, sugar, and alcohol, this savory shredded chicken ensures you stay on track with your health goals without sacrificing flavor. It’s a clean, delicious protein source you can trust.
- Unmatched Versatility: From quick salads and hearty wraps to flavorful tacos and comforting casseroles, this chicken is incredibly adaptable. Use it in stir-fries, quesadillas, pasta dishes (for non-Whole30 meals), or as a protein boost for grain bowls. It’s truly a blank canvas for your culinary imagination, making weeknight dinners a breeze.
- Instant Pot Speed and Convenience: The Instant Pot transforms cooking time, delivering perfectly tender and moist chicken in a fraction of the time compared to traditional methods. It’s a true set-it-and-forget-it solution for busy individuals and families, allowing you to focus on other tasks while your dinner practically cooks itself.
- Ideal for Meal Prepping: Prepare a large batch at the start of the week, and you’ll have a versatile protein source ready for days. This significantly cuts down on daily cooking time, making healthy eating more accessible and sustainable, even on your busiest days. Say goodbye to last-minute meal stress!
- Incredibly Flavorful and Moist: By utilizing some of the foundational ingredients and techniques from my mom’s *caldo de pollo*, this recipe ensures the chicken remains incredibly juicy and infused with a savory depth that elevates any dish. No dry, bland chicken here!
Not only is this tender chicken a fantastic complement to any recipe calling for shredded chicken, but its preparation in the Instant Pot ensures it’s ready remarkably fast. This makes it an ideal option for last-minute meal assembly or when you simply don’t have hours to spend in the kitchen, but still crave a homemade, wholesome meal.

How to Achieve Perfectly Tender Whole30 Instant Pot Savory Shredded Chicken
Achieving perfectly tender and juicy shredded chicken in the Instant Pot is surprisingly simple, whether you’re starting with fresh or frozen poultry. A critical note before we dive in: I personally find that frozen chicken, particularly chicken breasts (which tend to be drier than thighs), often yields superior results in the Instant Pot. The longer cooking time and natural pressure release method for frozen chicken help maintain moisture and tenderness. However, fresh chicken works beautifully too, and I’ve included precise instructions for both scenarios below, ensuring you get perfect results every time.
Cooking Fresh Chicken in the Instant Pot
For those times you have fresh chicken on hand, this method gets you to tender, savory shredded chicken in a flash:
- Prepare the Pot: Begin by placing 2 pounds of fresh chicken breasts or thighs directly into the Instant Pot. There’s no need for a trivet when cooking fresh chicken submerged in liquid.
- Infuse with Flavor: Add 2 teaspoons of salt, ⅓ cup of roughly chopped cilantro, 1 stalk of chopped celery, ¼ of an onion (roughly chopped), and two whole garlic cloves. For an extra layer of authentic flavor and a beautiful golden hue, you can also consider adding a small pinch of saffron. These aromatics will infuse the chicken with incredible savory notes, creating a rich base.
- Add Liquid: Pour 1 cup of water or low-sodium chicken broth into the pot. If adhering strictly to Whole30 guidelines, ensure your chicken broth is compliant (check for added sugars or non-compliant ingredients).
- Seal and Set: Secure the Instant Pot lid firmly and turn the valve to the “Sealing” position. Select the “Manual” (or “Pressure Cook”) setting, ensuring the pot is correctly sealed for pressure cooking.
- Pressure Cook: Set the Instant Pot to cook at high pressure for 10 minutes. This precise timing ensures the chicken cooks through without becoming dry, creating tender, fall-apart results.
- Release Pressure Manually: Once the 10 minutes of cooking time are complete, it is crucial to perform a manual (or quick) pressure release. This step is vital because if you allow the pressure to release naturally, the chicken will continue to cook in the residual heat, leading to overcooked, stringy, and tough results. Quick release prevents this, locking in moisture.
- Shred and Moisten: Carefully remove the cooked chicken from the Instant Pot. Using two forks or your clean hands (once cooled slightly), shred the chicken to your desired consistency. Finally, mix in about ½ cup of the flavorful cooking liquid. This step is key to keeping the shredded chicken wonderfully moist and enhancing its savory profile for ultimate deliciousness.
Cooking Frozen Chicken in the Instant Pot (No Thawing Required!)
One of the greatest advantages of the Instant Pot is its ability to cook food directly from frozen, eliminating the need for advance planning and thawing. This method is perfect for busy days or when you spontaneously decide to make shredded chicken, saving you precious time without compromising on quality.
- Place Trivet: Start by placing the trivet at the bottom of your Instant Pot. This keeps the frozen chicken slightly elevated from the liquid, allowing for more even cooking and preventing it from sticking.
- Add Frozen Chicken: Place 2 pounds of frozen chicken breasts or chicken thighs directly on top of the trivet. That’s right – no need to defrost! The Instant Pot handles it beautifully.
- Add Aromatics and Seasoning: Add all the same savory ingredients as listed for fresh chicken: 2 teaspoons of salt, ⅓ cup of chopped cilantro, 1 stalk of chopped celery, ¼ onion, two garlic cloves, and an optional pinch of saffron. These will create a rich, aromatic broth as the chicken cooks.
- Add Liquid and Seal: Pour 1 cup of water or compliant low-sodium chicken broth into the pot. Secure the lid, and turn the valve to the “Sealing” position, ensuring everything is locked in for pressure cooking.
- Pressure Cook for Longer: Set the Instant Pot to cook at high pressure for 30 minutes. The longer cooking time accounts for the chicken starting from a frozen state, ensuring it cooks thoroughly and becomes perfectly tender.
- Natural Pressure Release: Unlike fresh chicken, for frozen chicken, it’s beneficial to allow the pressure to naturally release for 20 minutes at the end of the cooking cycle. This slower release helps the chicken maintain its tenderness and moisture, resulting in a more succulent texture. After 20 minutes, manually release any remaining pressure.
- Shred and Moisten: Carefully remove the cooked chicken and shred it using your preferred method (two forks work wonderfully). Incorporate ½ cup of the aromatic cooking liquid back into the shredded chicken to ensure it stays incredibly moist and flavorful, ready for any dish.
Storage Tips for Your Savory Shredded Chicken
Once your savory shredded chicken is ready, it’s primed for immediate use in your favorite recipes or for convenient storage for later. To ensure it remains as tender and juicy as possible, it’s highly recommended to store the chicken in some of its cooking liquid. This prevents it from drying out in the refrigerator or freezer, preserving its delicious flavor and texture.
- Refrigeration: Store the shredded chicken, submerged in about ½ to 1 cup of its cooking liquid, in an airtight container in the refrigerator for up to 3-4 days. This makes it perfect for quick lunches or dinners throughout the week.
- Freezing: For longer storage, portion the chicken (again, with some liquid to maintain moisture) into freezer-safe bags or containers. Label with the date. It can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating for best results.
- Reheating: Gently reheat on the stovetop over low heat, in the microwave, or even in the Instant Pot using the “Sauté” function with a splash of extra broth. Be careful not to overcook when reheating, as this can lead to dryness.

Whether you choose to incorporate this fantastic Whole30 shredded chicken into traditional Mexican dishes like mole or flautas, or opt for a modern twist in a vibrant salad, comforting pasta (for non-Whole30), or a hearty sandwich, it’s a truly invaluable staple to have readily available. This recipe isn’t just about cooking; it’s about smart cooking, making healthy and delicious meals a consistent reality in your busy life. Enjoy the convenience and the incredible flavor this Instant Pot method brings!
I genuinely hope this recipe brings as much ease and flavor to your kitchen as it has to mine. Enjoy the versatility and the incredible taste!

Whole30 Instant Pot Savory Shredded Chicken
by Gemma Aguayo-Murphy
Pin Recipe
Ingredients
- 2 lbs chicken breasts or thighs
- 2 teaspoons salt
- ⅓ cup roughly chopped cilantro
- 1 stalk chopped celery
- ¼ onion
- 2 garlic cloves
- 1 pinch saffron (optional)
- 1 cup chicken broth or water (use 3 cups for slow cooker, and a compliant broth for Whole30)
Instructions
-
Place 2 pounds of chicken breasts or thighs in the Instant Pot (no trivet needed).
-
Add salt, cilantro, celery, onion, garlic and saffron.
-
Next, add the water or low sodium chicken broth to the pot.
-
Secure the lid. Turn the valve to sealing and select manual (or pressure cook).
-
Set the Instant Pot at high pressure for 10 minutes.
-
Once the time is complete, manually release the pressure. This is important because if you allow the pressure to release naturally, the chicken will overcook and become stringy and tough.
-
Take out the chicken and shred. Finally, mix in about ¼ cup of the cooking liquid to keep the chicken moist.
-
If storing for later, store chicken in some of the cooking liquid as this will keep it from drying out.
Notes
- If you want to verify that your chicken is fully cooked, use a meat thermometer in the thickest part of the chicken breast or thigh. It should read between 165F – 170F.
- I used a 6 quart Instant Pot for this recipe.
- If using a slow cooker, add all the same ingredients, but with 3 cups of water or low sodium chicken broth. Cook on low for 4 hours.
Frozen Chicken Directions
- Begin by placing the trivet at the bottom of the pot.
- Then, place the frozen chicken breasts or chicken thighs on top.
- Add all of the same ingredients as listed above.
- Set the valve to sealing and set the time for 30 minutes at high pressure.
- At the end of the time, allow the pressure to naturally release for 20 minutes.
- Take out the chicken and shred. Mix in ½ cup of the cooking liquid to keep the chicken moist.
